Tanoya Shiojiro Choux Rusk is one of the representative local snacks of Kochi Prefecture, Japan. It is made using sun-dried salt from the famous local artisan salt brand "Tanoya Shiojiro" and combines French choux pastry that has been twice-baked to create a crispy rusk.
The crispy caramelized crust is extremely crunchy and airy, with just the right amount of caramel aroma that isn't too sweet. The sun-dried salt crystals on the surface balance out the sweetness.
