即係：越前蟹。
古代令制國，福井屬於越前國，所以仍叫越前蟹

文化小知識
越前蟹是係福井縣嘅縣蟹，其實同兵庫「松葉蟹」、鳥取「松葉蟹」一樣都係ズワイガニ（雪蟹），只係福井縣捕獲嘅雄蟹先可以掛「越前蟹」呢個品牌名。
正宗越前蟹嘅蟹鉗上，一定會綁住福井縣漁業協同組合發出嘅黃色標籤（有啲仲會印上編號），作為官方認證,證明係福井縣嘅漁港（三国港、越前港等）。
最高級的越前蟹，更會進獻給日本皇室享用。
